Creamy parsnip soup with prosciutto!
1. Melt butter in a large saucepan over medium heat. Add onion, parsnip and apple and cook, stirring often, for 5 minutes or until onion has softened.
2. Add stock, bay leaves and 1 cup water. Bring to the boil. Reduce heat to low and cook for 20 minutes until parsnip is very tender. Remove and discard bay leaves. Using a stick blender, puree soup until smooth.
3. Stir in cream. Season and reheat.
4. Meanwhile, cook the prosciutto in a frying pan until crisp. Ladle soup into bowls. Serve topped with prosciutto and chives.
Tip: For a lower-fat version of this soup, omit the cream and use milk in place of water.
