Perfect for Pancake Day!

Gluten-free pistachio, banana & date pancakes.

1. Process pistachios to fine crumbs. Reserve 1 tbs for serving. Combine remainder with quinoa flour and baking powder.

2. Combine banana, buttermilk, egg and vanilla. Add to dry ingredients and stir until smooth.3

. Heat a large frying pan or flat grill plate over medium-low heat. Grease with a little butter.

4. Add 1/3 cup batter to the pan for each pancake. Cook in batches, being careful not to crowd the pan, for 2-3 minutes or until edges are set and bubbles appear on surface. Flip over and cook for 1 minute. Keep warm.

5. Stack onto plates, dollop with yoghurt and scatter with dates and reserved pistachios to serve.

Tip:Don’t fancy pistachios? Make these pancakes with other nuts, such as almond or hazelnuts. You could also substitute the quinoa flour for woolworths free from gluten plain flour.
