RECIPE OF THE WEEK ALDI
Caesar salad with a twist!
1. Slice the chicken breasts and place in a bowl. Add the soy sauce, olive oil and season with salt and pepper. Combine well and set aside to marinate.
2. Place an oiled frying pan over a high heat. Add the bacon and cook for 2 minutes. Add the capsicum and onion, and cook, stirring continuously for 3 minutes.
3. Place another large oiled frying pan over a high heat, add the chicken and cook for 4-6 minutes or until browned and cooked through. Season with salt and pepper.
4. Pour the cooked capsicum mixture into the pan with the chicken and cook a further 2-3 minutes.
Dressing: Combine the mayonnaise, soy sauce, mustard, honey and olive oil in a small bowl. Season with salt and white pepper and whisk well.
Scatter the lettuce leaves over a serving plate, top with the cooked chicken, vegetables and avocado. Drizzle the dressing over salad to serve.
