Barbecue green prawns with Thai marinade.

1. Peel prawns, leaving tail intact and devein. Remove tough outer layer from the lemongrass and finely slice the tender part. Place into a small food processor.

2. Add shallots, garlic, chilli, kaffir lime leaves and lime rind and process to a finely chopped paste. Add brown sugar, fish sauce and lime juice and process until combined. Pour into a shallow ceramic dish, add prawns, and turn to coat. Refrigerate for 30 mins.

3. Heat a flat barbecue plate on medium heat. Add oil and prawns and cook in batches for about 1 minute each side, until they have changed colour. Serve on a platter with lime wedges.

Note: to devein a prawn, use a small sharp knife to make a slit along the middle of the back to expose the dark vein, use your fingers to carefully pull the vein through the opening at the head end to remove.
